Stuffed Honey Squash

these honey squash make the perfect side dish 

Trader Joes Holiday has is such a life saver you can use its so many ways ..

I used sausage but you can make it without taste just as yummy

Ingredients

3 honey squash scrubbed and seeds removed

1/2  container holiday vegetable hash from trader joes

( use 1/2 container if you are not using sausage)

1/2 pound ground sauasge 

1 tablespoon fresh thyme 

1 cup quinoa cooked 

Directions

Preheat oven 400'f line baking sheet with parchment paper

1 Brush evoo and sprinkle sea salt on each half of squash and lay cut side down on prepared baking sheet pan roast 20-25 minutes until tender to touch. 

2. meanwhile in a large sauté pan add sausage on medium high heat breaking up into small piece with a wooden spoon. Sauté for about 6-7 mins until gold brown when finish put cooked sausage in a bowl and set aside.

3. in the same pan drizzle 1 tablespoon heat for 1 minute add harvest hash sauté on medium high for about 8 minutes sprinkle a pinch sea salt stir in sausage and quinoa add season if needed. Saute' another 5 minutes .

4 Turn squash cut side up spoon harvest mixture into squash than put under broiler for few minutes just to give the top a little crunch about 3-4 minutes 

5. Arrange Stuffed Squash on platter I like to drizzle a little Tahini or a Yogurt drizzle
