Cauliflower and Buckwheat Tabouli Toasted

To make cauliflower rice add florets to food processor and pulse until resembles rice.

1 medium cauliflower makes about 2 to 2 1/2 cups cauliflower rice.


*ras el hanout*  A fabulous North African spice mix it means ( top of the shop). It contains over 20 different spices most commonly cinnamon, cardamon, cloves, chili, turmeric, and paprika. You can find it in spice shops, whole foods, and specialty food shops.

serves 4 people

Ingredients

4 1/2 cups cauliflower rice

1 cup of cooked buckwheat 

1/2 cup extra virgin olive oil

2 cloves chopped garlic

2 teaspoons ras el hanout 

2 1/2 cups flat leaf parsley chopped

1/4 cup dill chopped 

1/4 cup raw pistachios chopped

2 tablespoons lemon juice

sea salt and fresh pepper to taste.



Directions

Preheat oven 350' 

Place cauliflower, buckwheat, oil, garlic, ras el honout, salt and pepper in a large bowl and toss to combine.

Spread mixture on a rimmed baking pan roast for 25 - 30 minutes or until golden brown.

Put mixture in a bowl toss lemon juice, parsley, and dill
