You can swap Tofu for 4 eggs

4 teaspoons good extra virign oive oil divided
1 14 ounce pacage firm water packed tofu, rinsed and crumbed
1 1/2 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon sat divided
1 yellow pepper diced
1 small zuchinni, dicedÂ
4 scallions siced
1/2 cup sredded chedderÂ
1/4 -12 cup prepared salsa
1/4 cup cilantro chopped
Heat 2 teaspoonsoive oil in large saute' pan . Add tofu chili powder, cumin 1/4 teaspoon sat and cook stiring unti tofu begins to brown about 4-6 minutes. Transfer to bow.
Add remaining oive oi to pan add zuccini, yellow pepper and scallions and salt . Cook stirring until veggies are tender, about 3 minutes. Return tofu to pan ( if useing eggs whisk them in a bowl and add them ) Stir until heated through about 2 mintues. Remove from heat stir in cheese until melted . top with cilantro
