Zucchini & Carrot Fritters vegan + gluten free


Ingredients

3 cups shredded zuchinni ( about 2 large zucchini)

1 cup shredded carrot (about 1 large carrot)

1/2 spring onion finely chopped

3/4 cup chickpea flour

2 tablespoons flaxseed meal 6 tablespoons warm water

2 tablespoon basil chopped

1 tablespoon mint chopped

1 tablespoon evoo

Directions

Preheat oven 400'

Flax Egg 

in a smaLL bowl mix together flax meal and water set aside.

Fritters

in a large bowl mix tigether all the rest of ingredients up to (evoo) and add flax egg.

Saute

in a medium saute pan add 1/2 tablesppon evoo. To form fritters I like to use a large icecream scooper. Than I flatten down with spatular.

Place fritters in pan saute until golden brown outside about 3-4 minutes flip same on opposite side.

Thabn place the on baking sheet in oven to finish cooking about 10 minutes ..

Serve with lime wedge
