These cookies are "delish" and are very accomadating you can subsitute maple syrp for raw honey or vanilla extract for vanilla powder if you do add 2-3 tablespoons extra of almond flour .
If your dough is to sticky add a little more almond.

2 1/2 cup blanched almond flour
1/4 cup raw honey or 1/4 cup monk fruit sugar
1-2 teaspoon of grass-fed butter or coconut oil
1 flax seed egg or pastured egg
1 1/2 teaspoon baking powder
1 teaspoon vanilla powder
pinch of sea salt
Preheat oven to 350 degrees line 2 baking sheet with parchment paper
In a small bowl add 1 tablespoon of flax meal 3 tablespoons warm water stir and let sit 5 minutes
Combine all ingredients in a food processor and process until the smooth ball forms about 30 seconds.
Flatten dough wrap in plastic wrap. Chill 30 minutes.
Roll dough between two of parchment paper
Dip cutters in almond flour to prevent sticking.
Place cookies on prepared baking sheets bake 9-12 minutes until edges are light golden brown
Let them cool and you can dip in melted chocolate, crushed nuts, or whatever you like.

I have tried to come up with a cookie like a traditional butter or sugar that is gluten free, dairy free option, no refine sugar that I can eat once in a while .*HURRAY*, I did it!
These Vanilla Cookies are so yummy as is our you can add cinnamon, nutmeg, rosemary, anything herb or spice that you like.I dip them in dark chocolate, Anthony loves them if I dip them in milk chocolate.
