The tradional White Chicken Chili is sooo yummy but all that cream cheese and sour cream is way to much for me.
Mine is just as yummy and so much healthier !!
You can play with the amount of heat and spice you like.
Make sure you have a crusty loaf of bread near by.
(You can also use ready made rotisserie chicken

tablespoon extra virgin olive oil
1 onion diced
4 cloves garlic chopped
1/4 cup green onion the white parts only chopped
1 yellow pepper chopped
1/2 poblano pepper seeded and chopped or whole depends on your desire of heat
1 15oz can cannellini (beans rinsed and drained )
1 15oz can northern (white beans rinsed and drained )
1 15oz can pinto beans (rinsed and drained )
4 oz can green chilis ( I USE 2 oz) its all up to you
2 large chicken breast extra seasoning or ready made rotisserie chicken (3 cups shredded )
3 cups chicken broth
2 teaspoon cumin
1 1/2 cups plain yogurt dairy or dairy free
1/4 cup siesta taco seasoning plus 1 tablespoon to season chicken breasts
Season sea salt pepper
If you are using chicken breasts season with a little sea salt pepper 1 teaspoon siesta seasoning cook in air fryer about 8 minutes or until juices are clear ..
Shred chicken with 2 forks or I use a hand mixer works great
I a large pot heat olive oil than toss in both onions let them sweat add your garlic peppers.
Stir in your seasoning until fragrant about 2 minutes
Toss in all 3 beans and chilis stir for a minute add broth bring to a boil than simmer
Add shredded chicken simmer 10 minutes
Stir in yogurt simmer 5 mins taste for seasoning
Serve with avocados, green onions, cilantro and cheddar
