1 large head of cauliflower or 2 small
5 cloves of garlic
2 tablespoons smokes paprika
bunch fresh thyme
1 tablespoon fresh rosemary
1 lemon, zest and juice
good extra virgin olive oil
1/4 cup chopped almonds
1 can organic plum tomatoes
sea salt and pepper
preheat oven 400 degrees
1. Add garlic, paprika, to the bowl of food processor and process until garlic is minced. Add 4 tablespoons olive oil pulse than lemon zest, salt and pepper and pulse until becomes a paste.
2. Trim leaves of cauliflower and bottom so it sits upright in heavy bottom pot.
3. Rub paprika paste all over cauliflower drizzle lemon juice and olive oil.
4. Cover and roast 45 minutes check to see if it is tender.
5. Add 1 can of organic plum tomatoes. Cover for 20 minutes.Take out of pan place whole cauliflower on platter sprinkle fresh thyme, crushed almond, and drizzle of olive oil.
