Mushroom Ragu

Love. Love. Love. Mushrooms ! They are so veristile you can use them as a burger bun or as the burger itself. They have a creamy texture so no cream needed in Cream of Mushroom Soup just blend it. In this recipe I blend Shiitake and Cremi Mushroom to make a hearty ragu. It's really good alone, on top of Chickpea Flat Bread or on Pasta. 

Shiitake Mushrooms are the HAPPY mushroom beacuse they are loaded with Vitamin B6 which impacts the production of serotonin (feeling happy). Go ahead eat lots of shittake..

Ingredients

10 oz  shiitake mushroom sliced  (stems removed)

6 oz cremimi mushroom sliced (stems removed)

2 cloves garlic chopped

1 tablespoon good evoo

1 -2 teaspoon organic tomato paste

4 sprigs fresh thyme chopped

1 teaspoon rosemary chopped

pinch sea salt and pepper

1-2 tablespoon filtered water

Directions

In a  large saute pan on medium high add mushrooms in a dry pan for 4 minutes just enough to get them a little golden. Add evoo swirl in pan with mushroom to coat them with evoo sprinkle sea salt rosemary. Add 1 tablesopp tomato paste using a wooden spoon stir paste all around the pan cook for 2 minutes than add water stirring until juices are all combines. Simmer for 5 minutes. Remove from heat sprinkle fresh thyme taste for seasoning and serve..alone or on top of your FAV gluten free pasta or Chickpea Flatbread!
