Wilted Spinach + Pears with maple vinaigrette

I would double the recipe for Thanksgiving.

When making the vinaigrette make extra you can use it on a gorgeous salad or even on turkey sandwich next day ..

Ingredients

  • 10 cups fresh spinach 
  • 1 medium firm ripe pear, thinly sliced 
  • ½ cup slivered red onion 
  • 1-1 1/2 tablespoons extra-virgin olive oil 
  • 2 tablespoons cider vinegar 
  • 1 tablespoon pure maple syrup 
  • ¼ teaspoon salt 
  • ¼ teaspoon ground pepper 
  • ½ cup toasted pecans

Directions
Combine spinach, pear and onion in a large bowl.

  • In a  a saute’ pan add extra virgin olive oil, vinegar, syrup, salt and pepper; bring to a simmer. Immediately add spinach, onion and pears gently toss to coat. 
  •  Serve sprinkled with the and pecans
