1 pound zucchini grated
1/2 cup chick pea flour
1 teaspoon sea salt
1/2 onion grated
2 tablespoon nutritional yeast or 1/4 cup Parmesan
3 cloves garlic minced
2 tablespoon fresh basil chopped
1 egg beaten
1.Grate your zucchini and onion I use my food processor you can use a box grater
sprinkle sea salt toss into a colander. Let sit for 10 minutes. Clean dish towel drain zucchini completely.
2. In a large bowl combine zucchini, onion, chickpea flour, garlic, egg, basil, sea salt and pepper.
3. On a parchment lined plate or I like to use 1/2 baking sheet pan scoop batter for each fritter and flatten with spatular.
4. Spray evoo on air fryer pan and gently place Fritters cook on 360' for about 7-10 mins than flip cook 3-5 minutes
