Eating these fritters brightens my day especially when its gray and freezing outside. Looking at the vibrant color makes you say ahhh. #pretty food

3 cups zucchini (grated)
1 organic (eggs)
1/4 cup nutritional yeast or parmesan
1/4 cup brown rice flour or chickpea flour
1/4 cup scallions (chopped)
4 fresh mint leaves (chopped)
avocado oil for saute'
sea salt and pepper to taste
Grate the zucchinis and a pinch of salt. Let mixture stand for about 5 minutes. Using a clean kitchen squeeze the zucchini in order to get rid of excess water, then mix in chopped scallions, mint, sea salt, flour, nutritional yeast, and pepper. Mix well it should be as thick as pancake batter.
In a saute' pan add oil get it hot. In small batches (silver dollar size) saute about 2 minutes on each side or until golden brown.
Sprinkle some fresh mint and serve!
Zucchini has a hight water content, so adding eggs gives it the protein and fat that makes these fritters nourishing filling meal.
I love them with a simple Arugula Salad.
