Directions

  1. Preheat oven to 375º. Line a 12-count muffin tin with paper liners and set aside. This recipe may make a few more than 12 muffins.

  2. In a small bowl mix together applesauce ¼ cup coconut sugar 2 tablespoon maple syrup and 1 teaspoon cinnamon and set aside.

  3. Combine milk and lemon juice in a small glass dish and also set aside.

  4. Blend together dry ingredients in a large mixing bowl—flour(s), sugar, baking powder, baking soda, salt cinnamon. Mix in sour milk, maple syrup and oil, stirring until smooth.

  5. Fill paper liners ½ full, or muffin batter, add teaspoon cinnamon swirl top off then top  with more batter filling ¾ full. To finish off add a teaspoon of cinnamon swirl on top of muffins using a toothpick or knife. 

  6. Place pan into the oven bake 20-25 minutes  Makes 12–14 muffins.
