Roasted Cauliflower and Brussel Sprouts

I love this 'combo' cauliflower and brussel sprouts. I also love when I  get out of my cooking box and try new and exciting herbs and spices. With this dish, I made it all the time simply with sea salt, pepper, and EVOO. Now it's has a whole new taste and looks so colorful, with garam masala, turmeric, and cilantro. 

 
Ingredients
 

2 heads cauliflower florets

1 pound brussel sprout

1 1/4 cup EVOO

1 teaspoon ground mustard seed

1 teaspoon ground or 1 tablespoon grated turmeric

 1 teaspoon garam masala

1 teaspoon sea salt

2 teaspoons lemon juice 

1 bunch chopped cilantro

 
Directions
 

Pre Heat oven 375' line baking sheet pan with parchment

Cut Cauliflower into 1-inch florets. Trim brussel sprouts and cut in half lengthways.

Put olive oil and spices in a large bowl toss in cauliflower and brussels sprouts using a big spoon turn them into the bowl to make sure they are well coated with spiced oil.

Transfer veggies to prepared baking pan, placing brussel cut side facing down.

Put the pan in oven and roast for about 30-35 minutes or until dark golden brown and crispy on the edges.

Transfer roasted vegetables to a serving platter. Drizzle lemon juice and sprinkle chopped cilantro and serve with love!

My quest to find "The Best Healthy" Ice-Cream!

I scream, you scream, we all scream for ice cream!


Everyone loves ice cream. Vanilla, chocolate, strawberry… everyone has a favorite! So I made it my mission (along with some helpful taste-testers!) to find the best low-calorie ice cream.


1. Coconut Bliss- vanilla (non-dairy)           
2. So Delicious- vanilla (non-dairy)
3. Halo Top- vanilla (low sugar, low calorie, high protein)
4. Pro Yo- vanilla (low sugar, low calorie, high protein)

Spoons in hand, my taste-testers and I were about to dig in until… I was pleasantly surprised that the Halo Top ice cream says to let it sit on your counter for a bit before digging in. Why? Well, low-calorie ice creams freeze harder than regular ice cream, so we’ll start with Pro Yo, and come back to Halo Top.


Pro Yo: This ice cream is for someone who really likes protein powder and is a little crazy about it. My taste-testers and I didn't like it at all (personally, I don’t like the taste of any kind of protein powder- so this ice cream wouldn’t be my first pick), but for those who don’t mind the taste of protein powder, this is your go-to!  

Halo Top: This was the bomb! My hubby and I love it! It’s creamy, sweet and actually tastes like vanilla. An added perk, you can eat the whole pint for only 240 calories, that's crazy! There is a slight aftertaste that isn’t too great but if you’re going to store bought ice cream, you should definitely add a pint to your cart!  


So Delicious: When it comes to non-dairy ice cream, I’m not a fan. It reminds me of when I was a kid and would go to the diet control center and they told me to eat ice milk! My husband wasn’t a fan of So Delicious ice cream either.

So Delicious’s almond milk ice cream wasn’t bad, but it wasn’t the vanilla flavor I was expecting, it was more on the icier side.  


Coconut Bliss: Is made with coconut milk so it's on the creamy side. Bliss received an A+ from my hubby. With a strong vanilla flavor this ice cream is a great option if you’re lactose-free, but be weary, it’s a little high in calories.


So overall HALO TOP was the winner of low fat, low calorie, and Coconut Bliss was our runner up!

Visiting Local Farmers Market #3


On Sunday I went to the Fort Lee New Jersey Farmers Market..It looked like it was really good, but I didn't know it closed at 2 pm we got there at 1:35. My wise boy said, "mom didn't you check"!!!! Now for the future, I will check what time they start and finish.
We went running to the only veggie stand left, a man was shouting "we have 20 minutes left amen" do you think he was happy that we shopping!  I ran to the PATTY PAN SQUASH and BEANS grab a handful took a photo and scurried to back to the car. 

I love PATTY PAN SQUASH because I love all kinds of squash but these babies look like toy tops, you know the toy that you spin or mini flying saucers. I would give these to Anthony (my boy) when he was little he had no problem gobbling them down because they looked like a toy.....
 
 
Roasted Patty Pan Squash

1 pound patty pan squash ( I prefer the small ones)
5  cloves garlic smashed 
2 tablespoons EVOO
generous pinch of sea salt and pepper


Directions PREHEAT OVEN 400'
Toss all ingredients on a rimmed baking sheet pan making sure they all get coated with EVOO.
Place pan in the middle of the oven and roasted 20-35 minutes or until squash is golden. 
Place on a platter sprinkle a little fresh thyme and serve with LOVE

I love going to the farmers market and seeing an abundance of fresh fruit, especially when blueberries are in season. There are so many great, healthy recipes out there for summer and I love when blueberries are the leading ingredient! Some of my favorites include crumbles, pies, ice-pops and my all time favorite and easiest: FROZEN BLUEBERRIES.

Frozen blueberries are delish and are on the top of the SUPERFOOD chart.

Below are three steps to a frozen delight.

STEP 1- Rinse blueberries and pick off stems. Lay them flat and dry them with a paper towel (they must be completely dry or they will stick together.)

STEP 2- Freeze them on a rimmed baking sheet, single layer.

Step 3 - Once frozen, you can store them in an airtight container and for the next few days, you'll have a healthy frozen treat waiting for you!

I like to toss a few in my iced-tea, water or just pop them in my mouth!

I also love to plan ahead and freeze a case so I have them in the winter too. It's a really great addition to your middle-of-February sweet tooth moods, perfect for a blueberry crumble.

Benefits


  • Liquid chlorophyll washes drug deposits from the body.
  • Chlorophyll neutralizes toxins in the body.
  • Chlorophyll helps purify the liver.
  • Chlorophyll improves blood sugar problems.
  • Wheatgrass juice is an effective healer because it contains all minerals known to man, and vitamins A, B-complex, C, E, l and K. It is extremely rich in protein, and contains 17 amino acids, the building blocks of protein.
  • Wheatgrass juice contains up to 70% chlorophyll, which is an important blood builder. The chlorophyll molecules closely resemble that of the hemin molecule, the pigment which combines with protein to form hemoglobin. The major difference is the chlorophyll molecule contains magnesium as it’s central atom, and the hemin molecule contains iron. The molecular structure of these two substances is almost identical in all other respects.
  • Chlorophyll contains enzymes and superoxide dismutase, a copper-containing protein found in mature red blood cells. This enzyme decomposes superoxide radicals in the body into a more manageable form, thereby helping to slow down the aging process.
  • Wheatgrass juice is a superior detoxification agent compared to carrot juice.
  • The starch of the wheat berry is stored energy which when converted to simpler sugars is a quick energy source. It is especially good for athletes because it is a juice and is assimilated in 20 minutes or less, and uses very little of your body’s nutrients.
  • Because 1 ounce of juice equals 2 pounds of produce nutritionally, it naturally shuts off the appestat in the brain.
  • Wheatgrass juice improves the digestion.
Wheatgrass juice cures acne and even help to remove scars after it has been ingested for seven to eight months. The diet, of course, must be improved at the same time.

How to Use
  • Wheatgrass juice is an excellent skin cleanser and can be absorbed through the skin for nutrition. Pour green juice over your body in a tub of warm water and soak for 15 to 20 minutes. Rinse off with cold water.
  • Wheatgrass implants (enemas) are great for healing and detoxifying the colon walls. The implants also heal and cleanse the internal organs. After an enema is evacuated, implant 4 ounces of wheatgrass juice. Retain for 20 minutes.
  • Wheatgrass juice improves arthritis. Soak a cotton sock with 6 ounces and For minor eye irritation apply strained wheatgrass juice mixed with half pure water in an eye cup for 15 – 30 seconds.
  • Massage 6 ounces into the scalp and cover with shower cap for 15 minutes to Wheatgrass juice held in the mouth for 5 minutes will help eliminate toothaches. It pulls poisons from the gums.
  • Drink wheatgrass juice for skin problems such as eczema or psoriasis.
    Wheatgrass juice helps to keep the hair from graying.

    Properties of Wheatgrass


  • Wheatgrass can grow to useable lengths in just a few weeks, right in your own home.
  • Wheatgrass is gluten-free because it’s cut before the grain forms.

 In a perfect world, you have enough time in the day to make a shot of wheatgrass, luckily, you can blend and make a fresh batch with fresh grass and freeze it. Now you’ll have enough for about 7 shots.

Decoding Chicken Package Labels

My clients ask me all the time, what do all of the labels mean on chicken packages?

We all want to keep our families healthy and strong, but serving lean protein and choosing the healthiest options for dinner can be so confusing! At the grocery store we all ask ourselves, “do I buy all-natural, organic, free-range, air-chilled?” I’m here to help you decode chicken labels.

Pastured- This means the chicken was raised on a pasture instead of indoor confinement. They feed on grass and bugs, as well as soy and corn.

Heritage- A heritage chicken must be bred whose genetic line can be traced back multiple generations. These chickens have a moderate to slow rate of growth reaching appropriate market weight in no less than 16 weeks.

Pastured Heritage Chickens- These are the best. They’re raised the old fashion way, on grandma’s farm. Where to find these chickens: Goffle Chicken Farm in Wyckoff, NJ.

Air-Chilled- These chickens are chilled while hanging in the air as opposed to a cold water bath, which dilutes flavor and adds water weight that can add to the cost.

Organic- This label is regulated by USDA and indicates that the chickens were fed that is certified USDA organic. Also, these birds have been given no drugs, antibiotics or hormones.


What to Avoid:

Natural- No artificial ingredients have been added to the poultry meat, which is standard for all plain chicken. This label indicates nothing about where it came from, what it ate or how it was raised.

Enhanced or 15% Natural Broth- Some chicken producers add broth to its meat to plump it up and increase its weight. These chickens also have a higher salt content.

Hormones-Free- Not the same as “Raised Without Hormones” where chickens are given no hormones during their life. The USDA prohibits giving chickens hormones.

Cage-Free- Cage-Free doesn't mean that the chickens have adequate space to move or have access to the outdoors.

When it comes to buying a chicken we should all buy Pastured Heritage Chickens! Comparable to actual organic, like 5 years ago organic, when it was so hard to find and cost so much more. Now you can find organic produce at your local market. Like all supply and demand, the price of Pastured Heritage Chickens is a little bit steeper today, but not by much. The benefits of feeding your family healthier poultry and leaner protein will outweigh the few extra dollars this chicken costs.
